Pork Tenderloin Cacciatore
- 3 tbsp olive oil, divided
- 18 oz pork tenderloin strips
- kosher salt and freshly ground black pepper
- 22 oz Cacciatore Veggie Kit
- 1 tbsp The Fresh Market Italian Seasoning
- 28 oz can The Fresh Market Italian Tomatoes
- 1 c The Fresh Market Chicken Stock
- ½ c pitted olives (optional)
Heat 2 tbsp olive oil in a cast-iron skillet, dutch oven or large sauté pan on medium-high heat until hot. Season pork strips with salt and pepper and add to skillet and sear, turning occasionally to brown on all sides, 5-6 minutes total. Remove pork to a plate.
Add the remaining 1 tbsp oil to the skillet along with the veggie kit and Italian seasoning. Sauté until vegetables are tender and fragrant, 5-7 minutes. Add the tomatoes, chicken stock and olives, if using, to the skillet. Bring to a simmer and then turn the heat down to medium-low, simmering for 15 minutes until peppers are soft. Add the pork back into the skillet, stirring well to incorporate, and let simmer for 1-2 minutes more until pork is warmed though.
Serve warm over Yukon Gold mashed potatoes.
For Yukon Gold mashed potatoes: Oven: Preheat oven to 350°F. Place potatoes in an oven-safe container, cover with foil and bake for 15-25 minutes until potatoes are warmed through.
Microwave: Place potatoes in microwave safe container and heat on high setting for 2.5-3 minutes until potatoes are warmed through.
