Grilled Peach Tartine with Whipped Feta

Grilled Peach and Whipped Feta Tartine


  • 8 oz feta cheese
  • ½ c Greek yogurt
  • 1 ½ tsp lemon zest
  • 2 tbsp honey
  • 2 large peaches, ripe but firm, halved and pitted
  • 4 slices Genius Artisan White Loaf bread
  • Extra virgin olive oil
  • Fresh mint leaves


Preheat grill to medium heat. Stir together feta, yogurt, lemon zest and honey until smooth and creamy.

Drizzle peaches and bread slices with olive oil. Grill peaches flesh side down until slightly tender and lightly charred, 3-4 minutes. Grill bread slices until toasted with light grill marks, about 1 minute per side.

Spread whipped feta on one side of the grilled bread. Top with peach slices, and finish with a drizzle of olive oil and fresh mint.
