Hatch Chile Peppers Located in south central New Mexico in the Hatch Valley, Hatch, New Mexico declared itself to be the Chile Capitol of the World, and rightly so. "Hatch Chiles" refer to the type of chiles this little town has made so famous. Toward the middle of August, foodie radars start scanning for Hatch chiles. Devotees know it's only a brief late-summer affair but if you roast and freeze them, they can be used later without sacrificing flavor or texture. Spice Up Breakfast with Hatch Chiles The short season for Hatch Chiles is happening now. Want to get the most of these limited chile peppers? Try these ideas to spice up breakfast:
· Hatch Chile Sauce – Make a sauce that is delicious served over fried eggs. Simply put 10 or 15 stemmed and deseeded Hatch chiles in a pan, cover with water and simmer for 30 minutes. Remove from heat and blend water and chiles in a food processor until smooth. Add sautéed onion and garlic for extra flavor. · Spicy Omelet – If you like your morning spicy, this is an easy fix. Scramble up a few eggs, add a little milk, diced roasted Hatch chile peppers (deseeded) and anything else that sounds tasty – cheese, bacon, sausage, onion, garlic. Pour everything in a pan and flip when edges are starting to set. · Breakfast Burrito – Pan fry shredded potatoes. Scramble eggs with roasted, deseeded and chopped Hatch chiles. Combine potatoes and eggs and spread in the center of a tortilla. Top with bacon and cheese; fold and enjoy!
