Combine Mascarpone cheese with 1/3 - 1/2 cup powdered sugar, depending on desired sweetness. In separate bowl, combine 1/4 - 1/2 cup powdered sugar with the coconut flakes.
Take two Amaretti cookies and spread cheese mixture on the flat side of the cookies to form a sandwich. Brush or dunk with espresso. Do not soak too heavily or the Amaretti-Mascarpone Cookie will become too soggy. Then roll the cookie in coconut/sugar mixture. Repeat the process using the remaining cookies. Store the cookies between layers of wax paperin the refrigerator.
When serving the cookies, experiment with different designs when placing the cookies on the platter (making a pyramid pattern, a star pattern, etc.) Sprinkle any remaining coconut/sugar mixture on top of cookies.
